Monte Dall'Ora - Sausto Valpollicella Ripasso
In the hills outside Verona lies Castelroto, the place where owners Alessandra and Carlo Venturini decided to restore the ancient vineyard that is now known as Monte Dall'Ora. Their wines are made on biodynamic principles. They adopt measures in the vineyard to help preserve the fertility of the land.
Ripasso wine has been traditional in the region of Veneto for a long time. When mixed with younger wine, active yeast cells start a second fermentation which increases the alcohol percentage and makes for a more bitter-sweet tasting experience and smoother consistency. The wine is aged in cherry wood barrels which explaines the cherry and plummy notes and mouthfeel.
