Aur-oura is a red wine voluntarily declassified from its DOCG appellation, exclusively obtained from Dolcetto grapes hand-picked in Gaggero vineyards – plantation year between 1970 and 1996 – with 50-60 q. per ha yield. Spontaneous fermentation takes place in steel tanks, with the exclusive use of wild yeasts and prolonged macerations. It matures then for at least 12 months, mainly in cement tanks. The name Aur-oura comes from the Carpenese dialect of the second half of the nineteenth century and means "right now".
