Lazio is a region of Italy steeped in ancient wine traditions, as well as embracing innovative young producers. When it comes to exciting young producers, both in Lazio and Italy as a whole, Sete are making a name for themselves as radical natural wine makers, taking the ideas of low intervention to the extreme. Their wines are totally unfiltered, and totally free of added chemicals. This style of wine-making creates vibrant, raw flavours unique to the most natural of wine.
A wine that encapsulates this ideology in more than one way is Baffo (moustache or whiskers in Italian) This is the name given to the man depicted on the bottle, a veteran wine maker who was immortalised on the bottle for teaching the young, less experienced wine makers of Sete how to make wine, the blending of experience and tradition with youth and exuberance can be tasted in every drop of this wine, a blend of Ciliegiolo, Bonamico and Nero Buono.
All three varieties are fermented in fibreglass tanks, the Bonamico and Ciliegiolo having 24 hours skin contact and the Nero Buono 5 days. The wine is then combined post fermentation and aged on fine lees for 10 months.
All this creates a medium bodied wine, rich in colour, and full of juicy, vibrant acidity, well balanced by tart cherry notes and other stone fruits.
