TUNIA winery was born in 2008 fulfilling Chiara's dream: to create something entirely their.
The ingredients that their assembled were 40-year-old vineyards, enthusiasm, and skills, topped off with respect for what they have. Chiarofiore is one of our favorite long macerated wines. It's elegant, complex and with no defects.
Chiarofiore is the result of 4 different manual harvests.
The first, at the beginning of September: Trebbiano is harvested when it is not perfectly ripe yet, in order to obtain a wine with high acidity. Fermentation is done without the skins.
The second one, around September 10th: Vermentino is harvested perfectly ripe. Fermentation this time takes place on the skins for about a week.
The third, at the end of September: Trebbiano is harvested to full maturity. Fermentation, again, takes place with the skins.
The fourth is a late harvest made in early November: the last portion of Trebbiano is harvested. At this stage, the grapes are slightly withered and a part of them has been attacked by the noble rot (Botrytis cinerea).
These four parts are vinified separately, all in steel containers, then gathered together and aged in steel on fine lees for 12 months, and finally in bottles for another 6 months.
